ABSTRACT: Tofu is a non-fermented food product obtained by soybean extract coagulation and the soybean cultivar influences tofu characteristics. This study aims to assess the influence of sensory descriptive attributes of tofu on consumer acceptance. Eight Brazilian soybean cultivars were utilized to produce tofu. Sensory profiles were developed by 12 trained panelists using Quantitative Descriptive Analysis (QDA) and the intensity of ten sensory descriptors was measured using a 9-cm non-structured scale. Tofu acceptance was evaluated by 72 consumers using a 9-point structured hedonic scale. Principal Components Analysis (PCA) was performed on the data and the first and second principal components explained 44,6% and 20,7% of variability contained in the original variables. PCA indicated that consumer acceptance was positively influenced by juiciness and yellowish color (characteristics of tofu BRS 257 and BRSMG 790A) and negatively influenced by hardness and soybean aroma (tofu BRS 232 and BRS 216). RESUMO: O tofu é um alimento não fermentado obtido pela coagulação protéica do extrato de soja e suas características influenciam a cultivar de soja. Neste estudo, foram utilizadas oito cultivares brasileiras de soja para produção de tofu e foi avaliada a influencia dos seus atributos sensoriais na aceitação pelo consumidor. Os perfis sensoriais foram desenvolvidos por 12 julgadores treinados, usando a Análise Descritiva Quantitativa (ADQ) e a intensidade de dez descritores medida por uma escala não estruturada de 9 cm. A aceitação do tofu foi avaliada por 72 consumidores usando uma escala hedônica estruturada de 9 pontos. Os dados foram submetidos à Análise de Componentes Principais (ACP) e o primeiro e segundo componentes explicaram 44,6% e 20,7% da variabilidade contida nas variáveis originais. A ACP indicou que a aceitação pelo consumidor foi influenciada positivamente pela suculência e cor amarelada (características dos tofus BRS 257 e BRSMG 790A) e negativamente pela dureza e aroma de soja (tofus BRS 232 e BRS 216).
